One Pot Kangaroo Bolognese

What you'll need

1 tablespoon olive oil

1 brown onion, diced

2 garlic cloves, crushed

1 carrot, finely diced

1 celery stick, finely diced

200g mushrooms, chopped

1 zucchini, grated

1kg K-Roo kangaroo mince

2 x 400g crushed tomatoes

¼ cup tomato paste

1 litre beef stock

2 x 250g spelt spirals pasta

sea salt flakes & freshly ground black pepper

⅓ cup fresh basil, shredded

½ cup grated parmesan

How to cook it

  1. Heat olive oil in large non-stick sauté pan, over medium heat.
  2. Add onion, garlic, carrot, celery, mushrooms and zucchini stirring to combine.
  3. Cover and cook for 5 minutes or until onion is soft.
  4. Increase heat to high, add mince and cook for 5 minutes or until browned and cooked through.
  5. Add tomatoes, paste and stock stirring to combine and bring to the boil.
  6. Add pasta, reduce heat to medium, cover and cook for 20 minutes or until pasta is cooked and most of the liquid has been absorbed.
  7. Add basil stirring to combine and check seasoning.
  8. Serve with parmesan.
