Kangaroo Kebabs with Quinoa, Tomato & Chickpea Salad

What you'll need

500g pack K-Roo herb and garlic kebabs

Spray oil

1 cup quinoa, cooked

½ red onion, finely diced

400g tinned chickpeas, drained and rinsed

250g cherry tomatoes, quartered

1 Lebanese cucumber, diced

¼ cup mint, chopped

¼ cup smoked almonds, roughly chopped

Zest of ½ lemon

¼ cup lemon juice

1 tablespoon olive oil

Sea salt flakes and freshly ground black pepper

How to cook it

  1. Heat pan or barbecue to medium-high.
  2. Spray kangaroo kebabs with oil.
  3. Cook for 6-8 minutes, browning all sides.
  4. Stir cooked quinoa, red onion, chickpeas, tomato, cucumber, mint, smoked almonds and zest together.
  5. Whisk juice, olive oil, salt and pepper together for dressing.
  6. Pour over salad and toss to combine.
  7. Serve kebabs with quinoa salad.
