Kangaroo Burger Bowls with Smoky Paprika Dressing

What you'll need

4 K-ROO kangaroo burger patties
250g microwave brown rice
1 cup corn kernels
2 avocados, sliced
1 pack salad greens, shredded
8 cherry tomatoes, halved
½ cucumber, sliced into half moons
1 handful fresh coriander
1 lime, cut into wedges

Smoky paprika dressing
3 tbs Greek yoghurt
1 tbsp mayonnaise
1 tsp smoked paprika

How to cook it

  1. To make the dressing, In a small bowl, mix the Greek yoghurt, mayonnaise, smoked paprika, ground cumin and white wine vinegar. Stir until smooth, then season with salt and pepper to taste. Set aside.
  2. Heat the olive oil in a large frying pan over medium heat and cook the patties for 4–5 minutes each side, or until cooked through and nicely browned. Set aside to rest for a couple of minutes.
  3. Divide the warmed rice, lettuce, cucumber, cherry tomatoes, sweetcorn and avocado between serving bowls. Add a kangaroo patty to each, then drizzle generously with the smoky paprika dressing.
  4. Garnish with fresh coriander and serve with lime wedges on the side.
