Kangaroo Fillet with Asian Slaw

What you'll need

1 pack of shredded Asian slaw from supermarket OR

Shredded veggies (red cabbage, white cabbage, carrot, capsicum, cucumber)

1/4 cup Coriander or mint leaves (which ever you prefer, or both)

Dressing:

2 tbs white vinegar

2 tbs caster sugar

1 tbs soy sauce

½ tsp sesame oil (optional)

2 tbs olive oil

Optional: crunchy fried noodles, sesame seeds, sliced spring onions, fresh chilli.

How to cook it

  1. Season kangaroo fillet with salt and pepper and drizzle with oil.
  2. Heat frying pan or barbecue to medium-high.
  3. Cook for 4–5 minutes on each side for a medium-rare finish, or to your liking.
  4. Rest for 10 minutes under foil.
  5. Mix dressing ingredients  together in a small bowl and combine with slaw mix and herbs.
  6. Slice kangaroo fillet and place on top of the slaw.
  7. Garnish with crunchy noodles, sesame seeds, spring onions or chilli (optional).
