Kangaroo Kebabs with Broccoli & Cauliflower Rice

What you'll need

500g pack K-Roo kebabs

1 tablespoon olive oil

1 small brown onion, diced

1 red chilli, deseeded and sliced

300g broccoli rice

500g cauliflower rice

1 cup kale, chopped

1 cup frozen peas, thawed

1 tablespoon soy sauce

ΒΌ cup coriander leaves, chopped

How to cook it

  1. Heat a barbecue or chargrill pan to medium-high.
  2. Spray kangaroo kebabs with oil.
  3. Cook kebabs for 2 minutes on each side or until browned and cooked to your liking.
  4. Heat olive oil, onion, garlic and chilli in a large non-stick saute pan, over a low heat for 5 minutes.
  5. Add broccoli and cauliflower rice, stirring to combine.
  6. Increase heat to medium, cover and cook for 5 minutes, stirring occasionally, until tender.
  7. Add kale and peas, cook for a further 3 minutes.
  8. Season with soy sauce and garnish with coriander.
  9. Serve kebabs with fried broccoli and cauliflower rice.
