Kangaroo Burger with Tomato Chutney and Slaw

with Apple & Fennel Slaw

What you'll need

Kangaroo patties

2 x packs Kangaroo Burgers (8 burgers)

olive oil spray

Apple & cabbage slaw

½ white cabbage

4 red apples coarsely grated

½ red onion, peeled and finely sliced

¼ cup whole egg mayonnaise

1 tbsp lemon juice

1 tbsp finely chopped parsley

sea salt and freshly ground black pepper

To serve

8 x small bread bread rolls

2/3 cup tomato chutney

How to cook it

  1. Heat a barbecue to medium-high.
  2. Spray kangaroo burgers with oil.
  3. Cook burgers for 4-5 minutes on each side, or until cooked through.
  4. Add all the slaw ingredients together in a medium bowl, mix until well combined.
  5. To serve, halve bread rolls, then layer with tomato chutney, kangaroo pattie and top with apple & cabbage slaw.
